Pishmaniye is a Turkish sweet with a beautiful history and great taste. Initially, this sweetness was called Shishmaniye, translated from Turkish “Sishman” means “fat”. The delicacy was named after the beloved of a famous confectioner who lived in the Turkish city of Izmit. According to legend, a man in love was enchanted by a girl who was not distinguished by her slenderness, but was his only lover. This unique sweetness was created for her and for her sake. But after the wedding, happiness in the confectioner’s family did not last long: the young wife turned out to be a very jealous and fastidious woman, so the marriage broke up. They broke up, after which the sweetness was renamed Pishmaniye – from the Turkish “pishman” (“repented”).
Pyshmaniye is prepared on the basis of sugar, water, citric acid, oil and wheat flour. In fact, pyshmanie is a sugar syrup that is mixed in a special dish with fried flour. The fibers formed during the mixing process undergo additional processing and cutting, as a result of which small, friable balls are obtained.
